Squash Casserole

  1. Six to seven medium sized squash - avoid large overripe squash that will not taste as good.
  2. One package Jiffy Cornbread mix
  3. Ten to twelve pats of butter
  4. Three to four hot peppers
  5. One large onion
  6. One large bell pepper
  7. One egg
  8. Enough olive oil  or canola oil to grease the bottom of a pan or Pyrex dish
  9. One tablespoon or more of salt
  10. One teaspoon or more of black pepper
  11. One pan about the size of a sheet of paper

Oil your pan.  Cut the squash into slices and put into the pan.  Dice the peppers and onions and spread them out across the squash.

Mix the cornbread mix with milk and the egg and pour across the top.  Then place the butter pats evenly spaced across the top.

Bake at 350 in the lower rack for one hour or until done.

If you desire, you can put cheddar or pepper jack cheese across top and also substitute cream for milk.
